South Indian Mixed Vegetable Kurma

This mixed vegetable kurma is an aromatic and delicious dish made with fresh vegetables. This recipe is South Indian version of kurma made with ground spices. The vegetable kurma goes well with chapathi, roti, poori, paratha and naan.

Vegetable Kurma


 Ingredients:
  • Carrot - 2 (cubed)
  • Beans - 8 (cubed)
  • Peas - 1/4th cup
  • Cauliflower - 1/4 th cup
  • Soya Chunks - 1/4 cup (optional)
  • Onion - 1 (chopped)
  • Tomato - 1 (chopped)
  • Cinnamon - 1/2 inch stick
  • Cloves - 2 or 3
  • Oil
  • Salt to taste
To Grind:
  • Ginger - 1 inch piece
  • Garlic - 6 cloves
  • Coriander leaves - a hand full
  • Green chilli - 2 or 3
  • Cinnamon - 1/2 inch stick
  • Cloves - 2 or 3
  • Fennel seeds (Sombu) - 1 tbsp
Grind the above ingredients to a fine paste.

To Grind:

  • Grated coconut - 1/2 cup
  Grind grated coconut into a smooth paste.


Method:
  1. Heat oil in a pan, add cinnamon, cloves and saute.
  2. Add onions and saute until they are slightly brown.
  3. Add the above ground coriander ginger garlic paste and saute over low flame with frequent stirring until the oil separates and the raw smell goes off.
  4. Add tomatoes and saute until the tomatoes are soft.
  5. Now add the cut vegetables and soya chunks and saute well. 
  6. Add the ground coconut paste and mix well.
  7. Add required amount of salt, 1/2 cup water and saute well.(Adjust water according to the thickness you need). 
  8. Pressure cook for 1 whistle and switch off the flame.
  9. Serve hot with Chapathi / Rotis.
