Simple Vegetable Kurma

Vegetable Kurma is the best side dish for Indian bread varieties. The blend of vegetables with coconut and cashew nut paste gives the recipe a rich flavour. This recipe is a quick and easy version of kurma.

 
Vegetable Kurma

 Ingredients:
  • Carrot - 2 (cubed)
  • Beans - 10 (cubed)
  • Peas - 1/4th cup
  • Potato - 1 (peeled and cubed)
  • Onion - 1 (chopped)
  • Tomato - 1 (chopped)
  • Red chilli powder - 1/2 tbsp
  • Garam masala - 1/2 tbsp
  • Turmeric powder - 1/4 tbsp
  • Cinnamon - 1/2 inch stick
  • Cloves - 3 or 4
  • Oil
  • Salt to taste

To Grind:

  • Grated coconut - 1/2 cup
  • Cashew nuts - 7 to 8
   Soak cashew nuts in water for half an hour.
  Grind grated coconut and cashew nut into a smooth paste.
 

Method:
  1. Heat oil in a pan, add cinnamon, cloves and saute.
  2. Add onions and saute until they are slightly brown.
  3. Add tomatoes and saute, then add turmeric powder, chilli powder , garam masala and saute until  the tomatoes are soft.
  4. Now add the cut vegetables and saute well. 
  5. Add the ground coconut paste and mix well.
  6. Add required amount of salt, 1/2 cup water and saute well.(Adjust water according to the thickness you need). Pressure cook for 1 whistle and switch off the flame.
  7. Serve hot with Chapathi / Rotis.
