Vendakkai poriyal / Okra stir fry


Vendakkai poriyal  a simple and healthy stir fry dish. It goes well with steamed rice and variety rice too.

Vendakkai Poriyal

 Ingredients:
  • Vendakkai / Okra / Ladys finger - 1/2 kg / 1 lb
  • Onion - 1 (finely chopped)
  • Tomato - 1/2 (chopped)
  • Curd - 1 tbsp
  • Red chillies - 2
  • Grated coconut - 1/4 cup
  • Mustard seeds - 1/2 tbsp
  • Urad dhal - 1/2 tbsp
  • Curry leaves - 4 or 5 leaves
  • Oil
  • Salt to taste
 

Method:
  1. Chop the okra into thin circles.
  2. Heat oil in a pan, add mustard seeds. Once the mustard seeds splutter, add urad dhal, curry leaves, red chillies and saute.
  3. Now add onions and saute for a minute.
  4. Add the chopped okra and saute well until the stickiness in the okra goes off and they are tender.
  5. Add curd and salt and saute.
  6. Now add the tomato and saute until tomatoes are soft.
  7. Finally add grated coconut and stir well and turn off the flame.
  8. Okra Stir fry is ready.
