Simple Sambar


Sambar is the most popular south Indian recipe. Sambar is a lentil based stew cooked with vegetables and spices, simmered with tamarind juice. It is the most common recipe made at home which goes well with most of the breakfast recipes and rice. The recipe posted here is a simple drumstick brinjal sambar made with sambar powder. Any other vegetables of your choice can be used.

Sambar

 Ingredients:
  • Toor Dhal - 3/4th cup
  • Drumstick - 1 (diced)
  • Brinjal - 1 (diced)
  • Pearl onions /Shallots - 10
  • Tomato - 1 (chopped)
  • Tamarind -  a small ball (Soak tamarind in hot water and extract tamarind juice and discard the pulp)
  • Sambar powder - 1 1/2 tbsp
  • Turmeric powder - 1/4 tbsp
  • Mustard seeds ( for seasoning)
  • Hing / Asafoetida - a pinch
  • Coriander leaves
  • Oil
  • Curry leaves 4 to 5 leaves
  • Salt to taste.
 

Method:
  1. Cook toor dhal in a cooker along with turmeric powder.
  2. Take oil in a pan, add half of the onions and saute, once the onions are light brown, add the vegetables and saute for 2 minutes.
  3. Now add tomato and saute, add sambar powder and mix well.
  4. Add the above mix to the cooked dhal, add salt and pour 1/2 cup water (Adjust water according to the thickness you need) . Allow the vegetables to cook well along with dhal.
  5. Take oil in a pan, add mustard seeds. Once the mustard seeds splutter, add hing (Asafoetida) and curry leaves.
  6. Now add the remaining onions , fry till the onions become translucent.
  7. Add the above into the dhal and vegetable mixture. Stir well.
  8. Add tamarind juice and mix well. Allow to boil for 2 to 3 minutes.
  9. Garnish with coriander leaves and serve with rice or breakfast recipes like idly, dosa, pongal.
