Sambar Rice / BisiBella Bath


Sambar Rice (Sambar Satham ) or BisiBella Bath is a traditional south Indian main course dish. Sambar Satham is a nutritious dish where rice is cooked with vegetables and lentils. Adding spices to the rice gives it a great taste and makes it a very delicious dish. At the end of the week if you have many leftover vegetables this dish comes handy. This rice dish can be served with potato fry or appalam/pappad which makes the sambar rice really tasty. The posted recipe is a restaurant style Sambar rice which gives it the authentic flavour.

 Ingredients:
  • Rice - 1 cup
  • Toor Dhal - 3/4th cup
  • Carrots  -1  (diced)
  • Beans - 4 (diced)
  • Radish - 1/2 (diced)
  • Drumstick - 1 (diced)
  • Brinjal - 1 (diced)
  • Green peas - 1 cup
  • Pearl onions /Shallots - 10
  • Tomato - 1 (chopped)
  • Tamarind -  a small ball (Soak tamarind in hot water and extract tamarind juice and discard the pulp)
  • Mustard seeds ( for seasoning)
  • Fenugreek /Vendhayam 1/4 tbsp
  • Turmeric powder -1/4 tbsp
  • Coriander leaves
  • Oil
  • Ghee 3 tbsp
  • Curry leaves 4 to 5 leaves
  • Salt to taste.

To Grind:
  • Red chillies - 4
  • Channa dhal - 2 tbsp
  • Fenugreek /Vendhayam 1/2 tbsp
  • Grated Coconut 1/3 cup
  • Coriander powder - 1 tbsp
   Pour Oil in a pan, roast red chillies,channa dhal, fenugreek, grated coconut and     coriander powder until they become slightly brown. Cool the above roasted ingredients and grind them.
 
   

Method:
  1. Cook toor dhal in a cooker along with turmeric powder.
  2. Cook rice ( 1 cup rice: 6 cups water) and vegetables in a pan with closed lid. (If you are using a pressure cooker then use 1 cup rice: 41/2 cup water).
  3. Heat oil in a pan, add mustard seeds. Once the mustard seeds splutter, add fenugreek seeds and curry leaves.
  4. Now add onions , fry till the onions become translucent.
  5. Add tomatoes and saute well. Now add the grounded paste and saute. ( Sambar powder can be used instead of grinding the above paste).
  6. Add tamarind juice and mix well.
  7. Add the above mixture into the cooked dhal, stir well and allow to cook for 3 minutes.
  8. Now mix dhal and rice, add 1/2 cup water, add salt and pressure cook it.
  9. Remove pan from heat add ghee and mix well.
  10. Serve hot with potato fry or appalam/pappad.
