Mixed Vegetable Pulao


Mixed vegetable pulao is a favourite vegetarian meal prepared during festivals or special occasions. This dish is prepared by blending fresh vegetables like cauliflower, carrots, beans, peas, etc with rice sauted in ghee and whole spices.

  Ingredients:
  • Basmathi Rice - 2 cups
  • Carrot - 1 ( chopped)
  • Beans - 7 ( chopped)
  • Cauliflower - 1/4 (separated into florets)
  • Peas - 1/4th cup
  • Onion - 1 (chopped)
  • Tomatoes - 2 (chopped)
  • Cumin seeds - 1/2 teaspoon
  • Black cardamoms - 2
  • Bay leaf - 1 leaf
  • Cinnamon - 1 inch stick
  • Ginger  - 1 inch piece (chopped )
  • Garam masala powder 1/2 tbsp
  • Red chilli powder 1/2 tbsp
  • Coriander leaves
  • Lemon juice 1 tbsp
  • Oil - 3 tbsp
  • Ghee - 1 tbsp
  • Salt to taste
 

  Method:
  1. Wash and soak rice 1 cup rice  : 1 and a half cup water ratio for 30 minutes.
  2. Heat oil in a pan, add cumin seeds, black cardamoms, bay leaf, cinnamon, black peppercorns and fry them.
  3. Add onions, ginger and fry till the onions become translucent.
  4. Add tomatoes and saute.
  5. Once the tomatoes get cooked add the vegetables and salt and mix well.
  6. Add garam masala powder, red chilli powder and mix well, allow to cook for 2 or 3 minutes.
  7. Add the soaked rice (along with water) , coriander leaves. When the mixture comes to a boil add lemon juice.
  8. Cook the rice on medium flame.
  9. Remove pan from heat, add 1 tbsp of ghee , mix well and serve hot.
