Coconut Milk Rice / Thenkai Pal Sadam


In India, coconut milk rice (தேங்காய் பால் சாதம்) is famous in the southern regions. The coconut milk rice is made with mild coconut flavours obtained from coconut milk, and usually served with Kurma(curry). The rice is cooked in coconut milk instead of water which gives it the rich flavour. Coconut milk is usually made with coconut flakes.
       
Coconut Milk Rice
          
 Ingredients:
  • Basmathi Rice - 2 cups
  • Ginger Garlic paste - 1 tbsp
  • Onion -1 (chopped)
  • Green chillies -4
  • Coconut milk -2 cups
  • Bay leaves - 1 leaf
  • Cinnamon - 1 stick
  • Cloves - 4
  • Cumin seeds - 1 tbsp
  • Ghee - 3 tbsp
  • Coriander leaves
  • Salt to taste
 


Method:
  1. Wash and soak rice in 1 cup water for 30 minutes.
  2. Heat ghee in a pan.
  3. Add bay leaves, cinnamon , cloves , cumin seeds and saute for 2 minutes
  4. Add onions , fry till the onions become translucent.
  5. Add ginger garlic paste and saute till the raw smell goes off.
  6. Add green chillies and coriander leaves and fry.
  7. Add the soaked rice, now add the coconut milk, salt to taste and allow to cook (Do not drain the water, use the water in which the rice was soaked. Do not add more water) .
  8. Remove pan from heat, stir well and serve hot with gravy of your choice.
