Carrot Beans Poriyal / Carrot Beans Stir fry


Stir fry is the easiest method to introduce vegetables to our food. Poriyal is a traditional south indian method to cook vegetables.
Carrot has natural sugar in them, they are delicious and crisp, so this makes it easy to add them into out regular vegetable list. 

Carrot Beans Poriyal

 Ingredients:
  • Carrot - 2 (finely chopped)
  • Beans - 12 (finely chopped)
  • Onion - 1 (finely chopped)
  • Red chillies - 2
  • Grated coconut - 1/4 cup
  • Mustard seeds (for seasoning)
  • Curry leaves - 4 or 5 leaves
  • Oil
  • Salt to taste
 
Method:
  1. Heat oil in a pan, add mustard seeds. Once the mustard seeds splutter, add curry leaves, red chillies and saute.
  2. Now add onions and fry till the onions become translucent.
  3. Add the chopped vegetables(carrot, beans) and saute well by adding salt.
  4. Add 1/4 cup water and cover the pan with a lid and let it cook by stirring time to time.
  5. Allow to cook until the vegetables are soft and the water has evaporated.(If the water has drained and the vegetables are not cooked, sprinkle water till the vegetables are cooked).
  6. Now add grated coconut and stir well and turn off the flame.
  7. Carrot Beans Stir fry is ready.
