Betroot chops Masala Curry


Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium. Betroot chops Masala Curry is one of the tasty methods to introduce beetroot to our meal.

Beetroot chops Masala Curry

 Ingredients:
  • Beetroot- 1 (finely sliced)
  • Onion - 1 (sliced)
  • Tomato - 1 (chopped)
  • Mustard seeds - 1/4 tbsp
  • Curry leaves - 4 or 5 leaves
  • Oil
  • Salt to taste

To Grind:
  • Fennel seeds(Sombu) - 1/2 tbsp
  • Red Chilli - 2
  • Cloves - 1
  • Cinnamon - 1/2 inch stick
  • Grated coconut - 1/4 cup
  • Garlic - 4 cloves
Grind the above to a smooth paste.


 

Method:
  1. Pressure cook beetroot with water and salt until the beetroot is tender.
  2. Heat oil in a pan, add mustard seeds. Once the mustard seeds splutter, add curry leaves.
  3. Now add onions and saute till the onions become translucent.
  4. Add the ground paste and saute well until the raw smell goes off.
  5. Now add the tomatoes, salt and saute until the tomatoes are soft.
  6. Add the cooked beetroot and mix well. Close the lid and allow for cook for 2 to 3 minutes.
  7. Turn off the flame and serve hot with rice.
