Beetroot Poriyal / Beetroot Stir fry

Stir fry is the easiest and simplest way to introduce vegetables to our food. Poriyal is a traditional south indian method to cook vegetables.
Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium. 
Beetroot poriyal

  • Beetroot- 1 (finely chopped)
  • Onion - 1 (finely chopped)
  • Red chillies - 2
  • Grated coconut - 1/4 cup
  • Mustard seeds (for seasoning)
  • Curry leaves - 4 or 5 leaves
  • Oil
  • Salt to taste

  1. Pressure cook beetroot with water and salt until the beetroot is tender.
  2. Heat oil in a pan, add mustard seeds. Once the mustard seeds splutter, add curry leaves, red chillies and saute.
  3. Now add onions and fry till the onions become translucent.
  4. Add the cooked beetroot and saute well until the water has evaporated.
  5. Now add grated coconut and stir well and turn off the flame.
  6. Beetroot Stir fry is ready.
