Rava Kesari

Kesari is a popular South Indian dessert made with Semolina (Rava). This sweet dish is very easy and quick to make. This dish comes handy when you have unexpected guests.

Rava Kesari

  • Semolina / Rava / Sooji - 1 cup
  • Sugar - 1 1/2 cup
  • Cardamom powder /Elachi powder - 1/4 tbsp
  • Cashew nut - 10
  • Raisins - 8
  • Saffron / Kesari powder - a pinch
  • Ghee - 3/4 cup
  • Water - 2 1/2 cups

  1. Heat little ghee in a pan, fry cashew nuts and Raisins and set aside.
  2. Heat 2 tbsp ghee in a pan, add rava (semolina) and roast for 2 minutes and set aside.
  3. Now take water and sugar in a pan and allow to boil. Add saffron or kesari powder to it and give a stir.
  4. When the water starts boiling, reduce the flame and slowly add the rava (Semolina) into the water and stir continuously so that lumps are not formed.
  5. Now add in the remaining ghee slowly with constant stirring.
  6. Stir well until the water is absorbed and the kesari does not stick to pan.
  7. Add cardamom powder and stir well.
  8. Now add the cashew nuts and raisins and serve hot /warm.
