Ven Pongal is one of the common South Indian breakfast recipes. When served hot with sambar and coconut chutney it is one of the best breakfast dishes.
Ingredients:
Raw Rice - 1 cup
Split Moong Dhal - 1/2 cup
Water - 4 cups
Cashew nut - 7 (halved)
Cumin seeds (Jeera )- 1 tbsp
Pepper seeds- 1/2 tbsp
Ginger - 1 inch piece (crushed)
Curry leaves - 4 or 5 leaves
Oil
Ghee - 3 tbsp
Salt to taste
Method:
Dry roast moong dhal in a pan until they are slightly brown.
Pressure Cook raw rice and the roasted moong dhal with 4 cups of water along with salt until the rice is mushy.
In a pan take a table spoon of oil and ghee, add pepper seeds and saute .
Now add cumin seeds and saute.
Then add curry leaves and ginger and saute.
Finally add cashew nuts and saute till its slightly brown.
Add the above roasted ingredients into the cooked rice and dhal and mix well.
