Rava Idli
Rava Idli is a popular breakfast recipe in South India. It is a quick alternate to traditional idli as this does not require grinding or fermenting.
Ingredients
:
Rava / Sooji - 1 cup
Yogurt / Curd – 1/2 cup
Curry Leaves – 4 or 5 leaves
Green Chilli – 1 (finely chopped)
Cilantro / Coriander leaves – 2 tbsp(finely chopped)
Ginger – 1 tbsp, (finely grated)
Carrot
– 3 tbsp (finely grated)
Water – 1/2 cup
ENO Fruit Salt – 1 tbsp
Oil – 2 tbsp
Mustard Seeds – 1/2 tbsp
Asafoetida (Hing) – a pinch
Channa Dhal – 1 tbsp
Urad Dhal – 1 tbsp
Dry Whole Red Chilli – 1
Broken Cashew nut pieces – 1 tbsp
Salt to taste
Method:
Heat oil in a pan, add mustard seeds.
Once the mustard seeds splutter, add
Asafoetida , red Chilli, channa dhal , urad dhal and cashew nuts.
When Channa and Urad Dhals become light brown, add in Rava and stir well.
Roast the Rava for 3 minutes.
Turn off flame and allow it to cool for about 10 minutes.
Lightly oil Idli trays with cooking oil.
Prepare Idli steamer by pre-heating water to a boil.
In a bowl, mix Yogurt, Curry Leaves, Green Chillies, Cilantro, Carrot, Ginger and Salt.
Add the cooled Rava to it and mix together.
Add water little by little and keep mixing until there are no lumps. Allow the batter to rest for at least 15-20 minutes.
Add ENO Fruit Salt and mix well. The mixture should foam up.
Immediately pour mixture into the Idli Trays and put the Idli Stand into the steamer.
Place a tight lid on the steamer and steam Idlis for about 15 minutes on medium heat.
Remove Idlis from the trays by scooping them out with a spoon.
Serve hot with chutney or sambar.
