Curry leaves chicken


Curry leaves chicken is a simple flavourful chicken recipes. With the aroma of chicken roasted in curry leaves and spices, this chicken recipe tastes splendid.

Curry leaves chicken

  Ingredients:
  • Chicken - 250g / 1/2 lb
  • Red chilli powder - 1/2 tbsp
  • Coriander powder - 1/2 tbsp
  • Curry leaves - 15 to 20 leaves
  • Oil
  • Mustard seeds - 1/2 tbsp
  • Salt to taste
To Grind:
  • Fennel seeds (Sombu) - 1 tbsp
  • Cinnamon stick - 1 inch piece
  • Cloves - 3 or 4
  • Pottu Kadalai / Fried Gram /  Roasted Bengal Gram - 1/3 cup
Grind the above ingredients to a fine powder.

 

Method:
  1. In a bowl, add 3 table spoon of the above grounded powder, red chilli powder, coriander powder, salt and mix well. (Adjust powder according to the amount of chicken used)
  2. Add the chicken pieces to it and mix well so that the chicken gets well coated with the powder. Allow the chicken to marinate for half an hour.
  3. Take the marinated chicken in a pressure cooker, pour enough water for chicken to cook and pressure cook the chicken until tender.
  4. Heat oil in a pan, add mustard seeds. Once the mustard seeds splutter, add curry leaves.
  5. Now add the cooked chicken and allow the water to evaporate.
  6. Roast the chicken until it is slightly dry.
  7. Turn off heat and serve hot.
